The balance of a low carb diet is high fat. But good fats. So I don’t skimp on oil-based salad dressing.

Tahini Lime Salad Dressing
I make up 3 servings of this dressing at a time:
1 tbsp flaxseed oil (or walnut or macadamia oil)
1 tbsp maple syrup
1 tbsp tahini
1 lime’s worth of juice (about 2-3 tbsp)
It all gets shaken vigorously in a jar. Nice and creamy.
