All that needed to be changed about Nigella’s recipe was the dressing. Thankyou walnuts!

New Orleans Coleslaw with Walnut Dressing
Even though I am vegan, I really love Nigella Lawson’s books and videos. It’s probably the homeliness of the recipes coupled with her sensory-rich language.

Nigella Express
Nigella’s New Orleans Coleslaw, from “Nigella Express” looked so lovely, and I’ve been dying to make it with a healthy-fat dressing.

Nigella’s New Orleans Coleslaw
Here’s my creamy walnut coleslaw dressing:
100g walnuts
about half a cup of water
1 tbsp apple cider vinegar
1 tbsp maple syrup
2 tbsp fresh lime juice
1/2 tsp sea salt
Blend the walnuts until they are finely ground (I do this using my Bamix)
Add the water, apple cider vinegar, maple syrup, lime juice and salt, and blend until smooth and creamy. You might need to add some more water to get a thin enough consistency.
