There are 3 things I love about cooking with coconut oil.

Coconut oil to roast vegetables.
The first thing I love is that coconut oil doesn’t go rancid at high temperatures. Extra virgin olive oil and most other vegetable oils are not stable at cooking temperatures.
The second thing I love is that coconut oil is about two thirds medium chain triglycerides, which our bodies can use as energy without breaking them down first. Great for endurance running.
The third thing I love is that when I get it all over my hands (because I’m a messy cook), I just rub it in like moisturiser.
