I’m not sure what the question is exactly, but I know that sometimes the answer is ‘soup’.

Left over vegetables roasted in coconut oil are great reheated with left over gravy, but not always. Sometimes, though, what’s called for is soup. Homely, comforting, sharable (if eating the former option, I would not share).

The left over veggies go into the blender, along with enough water to almost cover them (depending on the consistency you like) and a teaspoon of miso paste and about a tablespoon or two of cashew cream. They get blended until smooth.
Then into the saucepan this goes, with some veggie stock powder and maple syrup to balance the flavour just as you like it. A few pinches of dehydrated herbs as it’s heating through and you’re set.

Warm it gently, give the flavours some time to get to know each other and mingle well.
