Non-ho-hum Vegetable Stir Fry

The Vegetable Stir Fry… default vegan meal offered by non-vegans. Ho-hum. But with a few little changes, it doesn’t have to be.

It starts with the usual mega load of chopped vegetables.

How many cups of veggies do "they" recommend we eat each day? This is about 8 cups for 2 people.

But what makes this stir fry non-ho-hum? These few things:

  • Lots of coconut oil to fry in, for its high heat tolerance and its medium chain triglycerides for easy fat burning energy
  • About a tablespoon of sesame seeds for calcium
  • A handful of raw cashews, added near the end of cooking so as not to burn them, for a little protein
  • Shiitake mushrooms for some meaty texture (not as a meat substitute – I just don’t know what other word to use)
Very hot and quick stir frying in my enamelled cast iron wok.
