The Vegetable Stir Fry… default vegan meal offered by non-vegans. Ho-hum. But with a few little changes, it doesn’t have to be.

Non-ho-hum Vegetable Stir Fry
It starts with the usual mega load of chopped vegetables.

How many cups of veggies do “they” recommend we eat each day? This is about 8 cups for 2 people.
But what makes this stir fry non-ho-hum? These few things:
- Lots of coconut oil to fry in, for its high heat tolerance and its medium chain triglycerides for easy fat burning energy
- About a tablespoon of sesame seeds for calcium
- A handful of raw cashews, added near the end of cooking so as not to burn them, for a little protein
- Shiitake mushrooms for some meaty texture (not as a meat substitute – I just don’t know what other word to use)
