Mustard Vinaigrette

I’m pretty sure that this dressing was inspired by a trip to France, and lunch at the non-English speaking grandparents of a friend…

This salad dressing is as tasty as it is simple. I usually keep pretty jars and bottles from condiments and jams I buy from the supermarket, and this dressing is made in one of those. In fact, it’s the very same jar that my choice of French mustard for this recipe comes in:

1 tsp French mustard (of course, try any mustard you like)
1 tsp Flaxseed oil (but macadamia or olive or walnut oil would be nice)
1 tsp maple syrup
2 tsp apple cider vinegar

Shake together in a jar, et voila, il est prĂȘt!

Shaken, not stirred.

Today I had this drizzled over a simple green leaf salad with some lebanese cucumber and Thai Flavoured Blackbean Rissoles, fried straight out of the freezer, in coconut oil.
