Summertime in Queensland = mangoes. Creamy chia pudding with pureed mangoes and vanilla coconut yoghurt tastes like a mango Weis Bar.
Another easily digestible pre-workout fuel, or snack for anytime. This one is prepared in sealable containers, to have them ready to eat without wasting a moment’s time prior to an early ride.
Also, I made this one a bit thicker than the Chocolate Chia Pudding.
INGREDIENTS
1 cup of Nutty Bruce activated almond, or almond and coconut, or coconut milk
4 tablespoons chia seeds
1 pinch vanilla powder
1 mango, peeled and sliced into chunks
A few spoonfuls of vanilla coconut yoghurt (Co Yo is my favourite)
INSTRUCTIONS
Add the almond milk, chia seeds and vanilla powder to a protein mixer bottle (with a wire whisk) and shake it with gumption.
Pour into 4 small snack containers, about 150ml in volume and that seal with a lid.
Puree the mango in a blender. I use my little Nutri Ninja 2-in-1. Then distribute the mango over the four chia puddings.
Add a big dollop of coconut yoghurt on top of the mango, and screw on the lids of the containers.
Refrigerate overnight.
They can be refrigerated for about 3 or 4 days.
