This fudge is very dark, very chocolatey but not too sweet.
I made this fudge with one of the several 50g blocks of Lindt 99% dark chocolate sent to me as a gift from a customer in the Netherlands. It’s the perfect chocolate to use for a dark fudge that barely has any sweetness. My favourite.
INGREDIENTS
100g coconut butter (coconut manna)
60g raw cashew or macadamia butter
50g 99% dark chocolate
2 tbsp maple syrup
1/4 tsp vanilla extract (or vanilla powder)
pinch of sea salt
INSTRUCTIONS
In a saucepan over a very gentle heat, slowly melt the coconut butter, cashew butter and dark chocolate until combined and completely melted. Don’t let it bubble.
Add the maple syrup and vanilla and salt, and mix it well.
Pour into a wax paper lined tin and let it set in the fridge. Cut into small squares when it’s cooled and set.
